Place 1 to 2 teaspoons of lemon balm in a tea infuser or teapot. Add 8 fluid ounces of water heated to about 200°F, cover and steep for 5 to 7 minutes. Strain completely. For a stronger cup, use more herb rather than extending the steep time. Sweeten or add lemon if desired.
Flavor and Appearance
A pale golden infusion with a fresh lemon-like aroma, gentle green-herbal notes and a smooth, slightly sweet finish. The flavor is lighter than lemongrass and contains no true lemon fruit.
Storage
Keep tightly sealed in an airtight container away from heat, moisture, strong odors and direct light. Use clean, dry utensils and rotate stock regularly to preserve the leaf's delicate aroma.
